Christmas Cupcakes

Yesterday Evening I made some Holiday Themed
Cupcakes.They turned out really good,so I thought
I would share some Pictures. I took the before picture and Holly took the
picture of the finished product.

Playtime with Harley

We had Playtime with Harley Tonight! lol
she is really so precious.
She has this Little Toy Turtle on a strip and she doesn't
want to hurt it... but at the same time she want's to capture it,
It is really cute to watch!

HomeMade Guacamole Dip

This Evening We Made some Home Made Guacamole.It is sooo good. we really like guacamole,we have been using this same recipe for "ever". It is so simple! Here is the Recipe...

Guacamole

2. med-large Avocado's.

16.ounces of Sour Cream.

Lemon Juice -1 teaspoon.

Garlic Salt- to taste.

Red Chili Pepper Flakes -to taste.

Salt- a pinch.

Direction:In a small Bowl, Cut and Remove seed's from avocados.Remove the meat. Mash the Avocados with a fork until there only slightly chunky.(or until it is at your desired consistency). Add Sour Cream and Lemon Juice, stir. Then add your seasonings (Garlic Salt,Pepper Flakes,Salt- to taste).

It really is simple,

Is it really almost Winter?

Hi,How are you all? We hope you are having a great week!
Friday is Our last day of School for the Year,
So we have been pretty busy getting ready to wrap up
the First Semester.
We are looking forward to having 2 week's off for the Holidays!
Though it really doesn't feel much like Christmas here in
Upstate, South Carolina.
Earlier today the temperature reached to 80 degrees!(it is 77 right now!)
So Our New record high Temp. for December has been replaced to 80 degrees.
Wow! ...Yes...It truthfully does feels very weird to be wearing summer clothes in December! lol (:

Chocolate Coconut Mounds

As you all have Probably noticed we have been doing some of Our Holiday
Baking. Since it was My Turn to make something I decided to make one of my
Favorites,Coconut Mounds.They are really good.
They're very similar to a Hershey's Mound or the Almond joy(minus the almond) (:
But even better!
Here is the Recipe...

Chocolate Coconut Mounds
2. (14 oz.) Pkg. coconut
2. sticks butter
2. boxes powdered sugar
1. can sweetened condensed milk
1/2. block paraffin wax
8 oz. chocolate chips
~~~~~~~~~~~~~~~~~~~~~~~~~~~
Cream butter,sugar,and milk. Stir in coconut;mix well.
freeze until easy to work with.
Form the mounds,
Freeze another 20 minutes. Melt chocolate chips and wax in double
boiler. Dip mounds and drop on waxed paper.

Holiday Peppermint Bark

Here are a few Pictures of the Holiday Peppermint Bark that I made this Evening. It Turned out really well and it taste WONDERFUL. It is so Simple to make here is the Recipe...

Holiday Peppermint Bark

1 cup of Crushed candy canes

2 Pounds of White Chocolate

Peppermint flavoring (to taste)

Place candy canes in a plastic bag and hammer into 1/4 inch pieces or smaller (I choose smaller).Melt the Chocolate in a double boiler. Combine candy cane chunks with Chocolate (add peppermint flavoring at this point if desired.) Pour Mixture onto a cookie sheet layered with waxed paper and place in the refrigerator for 45 minutes or until firm. Remove from cookie sheet and break into pieces (like peanut brittle.)

Christmas Cookie's

Yesterday Katie and I made some Homemade Sugar Cookie's, we
decorated them with different colors of Icing's and Sprinkles.
We really don't like sugar cookies. we actually just like mixing all of the different
dye's to get a certain color of Icing and you know just having fun with them.
